The rainforests of the Tasmanian Highlands with their cool gorges offer a unique climate and the perfect growing conditions for this Australian mountain pepper. Botanically speaking, this pepper is not a "real pepper", but the fruit of an evergreen Australian shrub. When fully ripe, the black berries are harvested and carefully dried.
No other "pepper" has such a spectrum of flavours: at the beginning, the pepper tastes Tasmanian pepper Slightly sweetish and floral with a hint of cassis, followed by a complex spiciness that is somewhat reminiscent of Juniper and finishes with an intensely "spicy finish"
