Because of their intense aroma, even the smallest amounts are enough to enchant a dish. It has a scent of hay and wet earth mixed with that of the forest. The scent of the black winter truffle (Tuber brumale) is reminiscent of laurel and musk. Tuber aestivum is what mycologists call the summer truffle. Their nutty, mild taste inspires many. Truffles thrive particularly well in the Langhe, a region of northern Italian Piedmont. The delicacies presented here come from a family business near Alba, which is a leader in truffle processing. His sense of natural purity, regionality and craftsmanship convinced us.
