Description
Long pepper, stick pepper, or Bengal pepper - all terms for the same type of pepper. What is special about this Kampot pepper is that, like good grapes for a fine wine, it was allowed to ripen on the bush for a particularly long time, hence the brown-reddish colour.
In addition to this special colour, the long maturing process also results in a significant refinement of flavour! Our red long Kampot pepper is selected twice by hand.
FlavourThe flavour of long red Kampot pepper ranges from sweet and intense, like the best dark chocolate, to a cardamom-like freshness. The whole flavour is intensely spicy - it may sound a little exaggerated, but it is 😉
ApplicationFor stews and goulash, with lamb, beef and game, with savoury cheese, for cranberry sauce, for chutneys, with roast chicken. In the dessert area, of course, with anything chocolatey, fruit ice cream & sorbets.
TipIf grinding the pepper in a mortar is too strenuous, you can also grind it on a nutmeg grater - just be careful with your fingers!
