The highland pepper for this speciality comes from the southern Indian state of Kerala.
The Malabar Coast has been the best pepper-growing region in the world for over 2000 years. It is harvested in the sparsely populated Nature reserve (lake periyar) of the country. This unique national park is also home to tigers, elephants, buffaloes and leopards - hence the common name: Tiger pepper!
This mountain region offers many family farms a good livelihood through pepper cultivation.
After the elaborate harvest, the pepper is sun-dried, cleaned and sorted.
The highland pepper is then Cold smoked over beech wood for approx. 7 days. This creates a very harmonious combination of the fine pepper flavour with a subtle smoky note.
