Like its Chinese counterpart, this Nepalese Szechuan pepper is not a real pepper. It is a thorny shrub plant that can grow up to 10 metres high. After a yellow blossom, reddish to brown capsule fruits form.

The Szechuan pepper from Nepal is not the usual cultivated variety from China (Zanthoxylum piperitum), but an absolute rarity from the unspoilt primeval forests of the Himalayas. This Szechuan pepper is harvested by hand from wild pepper plants at an altitude of around 2000 metres - you can clearly taste the difference between the "wild Szechuan pepper" and the canned product!

FlavourThe flavour differs significantly from Chinese Szechuan pepper. The capsule fruits of the Himalayan Szechuan pepper are smaller and darker in colour. The pungency is much more pronounced and the flavour is intensely warm and woody with a distinctly floral scent of passion fruit and lime. It is very rare to find such a great and complex flavour: tingling spiciness, refreshing citrus notes and a slightly bitter woody aroma.

ApplicationA "must" for authentic Asian cuisine! Nothing can replace this flavour.
For wok dishes, curries, vegetable, meat and fish dishes.
AttentionThe essential oil content of 8-10% is almost three times higher than that of commercially available products. Therefore, please use sparingly!
