Description
Kampot is a province on the south coast of Cambodia, about 160 kilometres south of Phnom Penh. Between the sea and the gentle mountains, there is an ideal tropical climate and perfect heavy, mineral clay soil for growing this pepper.
In contrast to Indian pepper, Kampot pepper has its own special flavour. The fully ripe red fruits - real red pepper - are harvested individually by hand.
After drying, the fruit is cleaned by hand. Special care is required here to ensure the quality of the sensitive, ripe fruit. During drying, the pepper turns a dark reddish-brown colour.
