A normal bottle 1997: Fat, almost compote-like bouquet; appears very sweet, although the botrytis does not really come through at first. Pectin flavour on the palate, almost oily in its fullness. The wine needed a good hour to present itself more attractively. Still far too young! 99: Received a magnum at Jo Ziltener's birthday party. In the magnum, the wine is even more reserved and closed than in the normal bottle: it has a rather vegetal, almost somewhat cold appearance, but will of course live for a very long time in this way. (17/20). For 100 people in Bremen at the Sauternes launch. We drank it with the main course and it tasted excellent with the veal fillet with ginger crust. A very mineral, not too sweet Climens. 10: At a dinner at Haut-Chaigneau with Pascal Chatonnet. Medium yellow colour. Wonderfully fine-sweet bouquet, camomile, some saffron. Fine and delicate on the palate. Simply great fun and you'll gladly take a second sip because it's not so overloaded with sweetness.
